DINING CULTURES OF SOME ETHNIC GROUPS IN SAPA

Food sources of ethnic groups all originate from agricultural production, natural exploitation and commodity exchange.
Mainly eat rice, in addition to sticky rice, meat, bamboo rice, they like to eat many kinds of spices such as chili, galangal, lemongrass, ginger, cinnamon, lemon leaves, marinated with foods.
Their main food is rice, sticky rice, corn, potatoes, and vegetables, beans... They such as meat, fish, vegetables, eggs... to process and preserve food. Ethnic groups have many differences such as religion, customs, food, weddings, funerals, costumes, and worship.... Dishes such as KhâNhục, Xa Xíu, lean meat soup, seven-color sticky rice of the Giay ethnic group... are all very popular. 
Thắng Cố is a specialty dish of the Hmong people made from pork, horse, cow, buffalo, goat... with spices such as star anise, cinnamon, cardamom, ginger, lemongrass, chili... this is a unique dish that is very popular with tourists every time they go to markets like Sapa, BắHà and other places in the north west and east of Vietnam.
Some Hmong clans take the names of animals as their surnames, such as the Sùng (Bear) clan, the Hờ (Monkey) clan, the Lồ (Donkey) clan, the Má (Horse) clan... so they abstain from eating certain meats or parts of the animal's internal organs such as the Heart and Spleen.
 Like the Tày people, during funerals they abstain from eating things that refer to human parts such as Longan (considered human) and Rice Noodle (considered tendons of the deceased) and a year later family members also abstain from eating these things.
